I have told you of my love for scones.
I set out to find the ideal orange scone recipe, to alter, to perfect...
I think I have it.
Preheat oven to 400. Line baking sheet with parchment paper.
Ingredients: 1/3 cup sugar, zest of 1 orange, 2 cups of bread flour, 1 tsp. baking powder, 1/4 tsp. baking soda, 1/2 tsp. salt, 1 stick of unsalted butter, cold, 1/4 cup buttermilk,
1/2 cup sour cream, 1 egg.
Combine the sugar and orange zest, mix with your fingertips until sugar is moist and fragrant. (heavenly).
Add the flour, baking powder, baking soda and salt.
Grate the butter into the flour mixture and incorporate it until it looks like coarse meal.
Add in the buttermilk. In another small bowl, whisk the sour cream and egg until smooth.
Add to flour mixture. Use your hands to form the dough into a ball.
Place on a lightly floured surface and pat into a 7 inch circle.
Use a pizza cutter to cut into 8 triangles but do not separate.
Bake until golden, about 20 minutes.
Allow to cool before adding glaze.
The glaze: 3 tablespoons unsalted butter, melted
1 cup powdered sugar, sifted
1/2 tsp. orange extract
2 tbs. freshly squeezed orange juice (from the orange you used for zest).
I couldn't resist just adding a little more orange zest to the glaze also.
Whisk until smooth and spoon over tops of scones.
