Cranberry Scones

Every Sunday evening, my husband and I have a little time to burn so we head
to Starbucks for coffee and scones for our little weekly date.
I.love.scones.
I had only made the individual biscuit type scones before,
so when this recipe just happened to pop up on my facebook,
It spoke to me.

This would make a perfect Valentine breakfast.
 


Ingredients:
  • 1 cup of sugar, divided
  • 2 1/2 cups all purpose flour
  • 2 1/2 tsp. baking powder
  • 1/2 tsp baking soda
  • 3/4 cup chilled butter, sliced
  • 1 cup buttermilk, divided
  • 1 cup dried cranberries



Combine 2/3 cup of sugar, flour, baking powder and baking soda in a large mixing bowl.





Cut in butter until the mixture resembles coarse crumbs.




Fold in cranberries; stir in 3/4 cup of buttermilk just until moistened.



Turn the dough onto a lightly floured surface and knead 6-8 times.
Divide the dough in half.


Pat each half into an 8 inch circle on an ungreased cookie sheet lined with parchment paper.
Cut each circle into 8 wedges, but do not separate.
Brush tops with remaining buttermilk and sprinkle remaining sugar on top.



The recipe says bake at 350 for 15 minutes or until golden.




After 15 minutes, I had to turn the oven up to 400 for another 10 minutes to get them golden brown.




16 scones looks like a lot.
  I was thinking I could freeze some and eat them all week for breakfast.



Not.  They were all gone the next morning.

  1. I have neve made sconces but I love them. Yours tempt me to try! I love dried cranberries in baking.

  2. I will have to give your recipe to my Mom. She doesn't make them often, but sometimes she makes scones as a treat to enjoy with coffee. We always have dried cranberries in the house, so she might like to make these sometime. Thanks for sharing the recipe for these delicious looking treats.
