Broccoli Cheese Soup

I couldn't resist telling you about this soup especially since
my husband declared it to be the "best soup he had ever eaten."

Ingredients:  1 whole onion, diced, 1 stick butter, 1/3 cup flour, 4 cups whole milk, 2 cups half and half, 4 heads of broccoli cut into florets, 1 pinch of nutmeg, 3 cups grated cheese (I used mild cheddar), small dash of salt, freshly ground black pepper, chicken broth if needed for thinning.


Melt butter in a pot over medium heat and then add the onions.  Cook the onions for a few minutes, then sprinkle flour over the top.  Stir to combine and cook for about 1 minute. 


                                                          Pour in the milk and the half and half.
Add the nutmeg.

Add the broccoli, a dash of salt and plenty of black pepper.
Cover and reduce heat to simmer for 20 to 30 minutes or until broccoli is tender.
At this point, you can stir in the cheese and allow to melt.
Adjust seasonings if needed and serve as is,
or.....

 you can mash it with a potato masher to break it up.
Hmmmm, this is where I thought I would leave it, but it just wasn't pretty to me.



So you know that part in a recipe where it says, if you don't have a immersion blender....
you can transfer it to a blender and puree it....
Yeah, that was so not fun.
I guess I'll be buying an immersion blender.

After all of that, return it to the heat and  then add your cheese
and some chicken broth if needed for thinning.



Worth the mess?  Most definately.
This was the most satisfying comfort food I ever.did.have.

I served it with homemade biscuits.
I put the honey on the biscuit for my husband.

And then....I told him about that antique table I wanted...
He said,......."whatever you think, Sweetheart."

I thought that went well.

  3. Cream of broccoli soup is one of my favorite soups, even without cheese. And you must absolutely get an immersion blender. It took me some time to get my nerve up to use it as I had visions of soup flying everywhere but as long as you release the button before pulling the blender up out of the liquid that doesn't happen. It is amazing, one of my favorite tools now, and I'm not a gadget person. Mine came with a bunch of other little stuff but I have so far only used the main blender thingy. I went through decades of cooling the soup and then pouring it into a blender--such trouble. You will love it if you get one.
