Lemon Poppy Seed Waffles

When I found this recipe on Pinterest, I wasn't expecting much.
I wasn't even going to take photos.
But...WOW!  This is one of those things that knocked my socks off.



If I had a Bed & Breakfast.....and Lord help me, I hope I never have to get up
early to make breakfast in my own house for strangers...
But if I did, I would totally serve this along with my Stuffed French Toast.




Ingredients:


  • 1 pkg of Lemon Poppy Seed muffin mix
  • 2 beaten eggs
  • 1 tbs of sugar
  • 1 (6 oz) container of lemon (or vanilla) yogurt
  • 1/2 cup whipped cream cheese
  • 1/2 cup sour cream
  • 1 tbs lemon zest
  • 2 tbs lemon juice


Preheat waffle maker and spray with cooking spray.

In a medium bowl, combine eggs, sugar, yogurt, whipped cream cheese, sour cream, lemon zest and lemon juice; 
Wisk together for several minutes.

Add the muffin mix and blend well with the wet mixture.
The batter will be thick.
Spread in waffle maker and cook on medium.
Serve with a dollop of sour cream or syrup.

This recipe made 4 large waffles.
Added bonus: It even comes with icing you can use with the syrup!

{To be honest, I forgot to even add the whipped cream cheese and I would still give it 5 stars.}


We were really impressed with these waffles. 
 I think you will be too.




Besides, when was the last time you got your socks knocked off?
