I really have been trying to make healthy choices...
now that Biggest Loser is back on and everything.
Today I chose to make Homemade Granola over a Paula Deen poundcake,
with no encouragement from my facebook friends.
This means I will probably make the poundcake tomorrow.
It was really easy and super good.
First, ask a cute brown eyed girl to be your assistant.
Preheat the oven to 325 degrees and line a rimmed
baking sheet with parchment paper.
Wisk together 1/4 cup canola oil, 1/4 cup honey, 1/4 cup brown sugar, 1 tsp. vanilla extract, 1/4 tsp. cinnamon and 1/2 tsp. of salt.
Spread 3 cups of old-fashioned oats (not quick cooking oats.)
Pour the liquid mixture over the oats.
Don't worry if you can't get it over all of the oats. You will be able
to incorporate it better as it gets warm and you stir it while it is in the oven.
See...I wasn't kidding.
Bake for 20 minutes or until golden brown, stirring every 5 minutes.
Let cool completely and then transfer to a large bowl to stir in add-ins.
We used chopped walnuts, golden raisins and dried cranberries.
The possibilities are endless here....
coconut, almonds, pecans, raisins, chocolate....bacon...
Maybe not bacon.
Store in an air tight container for up to 2 weeks.
I have a feeling it will not last more than 2 days around here.
I like the idea buying the large containers of yogurt and portioning it into half-pint jars and topping it with this granola when you're ready to eat.
Seriously, I was never as skinny and cute as that brown eyed girl.

I printed out the recipe. Granola is so expensive to buy. Your sous chef is adorable, or were you hers?

ReplyDeleteShe really is adorable and I could use her help, too! I SO need to make of some of this. I buy it and sprinkle some on the top of my Protein Plus flakes. It gives it some flavor! Thanks for the recipe!
